Chocolate Lava Cake
Makes 12
Dark Chocolate 600g
Butter 300g
Whole Egg 700gram x 12
Egg Yolks x 12
Caster Sugar x 360
Plain Flour 300GRAM
Melt chocolate and Butter on stove top and stir to combine . Allow to cool
Whip eggs and sugar together until thick and creamy
Fold the egg mix into the chocolate + butter mix
Sieve flour and fold into the egg+chocolate mix gently
Brush the cake mould with butter and flour carefully to ensure that no areas are missed
Preheat oven 200°C
Cook in the oven for at 200°C in 15 minutes or until just set
Let the cake stand for one minute then overturn onto a rimmed plate, garnish with mascarpone cream, ice cream and ground chocolate crumbs
