Not only has she just launched her own foundation to help children lead a healthier lifestyle, Sally, 25, is also celebrating her first Christmas as a fiancée.
NRL star Trent Merrin popped the question while on a beach holiday in Vanuatu in October.
“I’m so blessed to have found someone like her,” says Penrith Panther Trent.
“Sal and I, we relate to each other like you wouldn’t believe.”
Although they’ve yet to set a firm date for the wedding, Sally says it’s likely to be in the summer of 2016/17.
Her brother has beaten her to the punch in 2016 – and there’s also the little matter of trying to win the next world championships.
“I’m going to charge after the world title – I want to be world champion. I’m proud of coming third this year, but I’ve got that fire in the belly now,” Sally tells The Daily Telegraph.

Meanwhile, Sally is looking forward to spending time with Trent in her native Gerroa, South Coast, NSW.
“Trent’s still finishing up at the Panthers’ boot camp in the Blue Mountains, before another gruelling training session,” she says.
“It’s only an hour-and-a-half up and down the coast, it’s not too bad.”
With Trent finally free of his Panther commitments Sally plans to take her new beau surfing and play plenty of backyard cricket together with her close-knit family.
And there’s no chance of over-indulging in the usual holiday treats – when it comes to health, she definitely practices what she preaches with the Sally Fitzgibbons’ Foundation.
Sally says she hasn’t eaten as much as a hot chip since she was a 10-year-old, doesn’t drink alcohol, or even have a coffee in the morning.
“It is all about having fun with your food and trying different flavour combinations,” the lactose intolerant Sally tells The Carousel.
“It is summer, we have an amazing array of summer fruits and vegetables. Make exciting salads and create that rainbow on your plate.”
So are there any guilty pleasures for Sally on the Christmas table?
“Crispy read apples with almond butter. It is so yummy; it is kind of like a desert.”
