These take just a few minutes to mix together and get into the fridge, and are an easy and nutritious after-school snack or kids’ party treat.

INGREDIENTS
125 ml (4 fl oz/1⁄2 cup) coconut oil 17 g (1⁄2 oz/1⁄2 cup) desiccated or shredded coconut
55 g (2 oz/1⁄2 cup) raw cacao powder 45 g (11⁄2 oz/11⁄2 cups) puffed rice or millet
75 g (23⁄4 oz/1⁄2 cup) currants
1 tbsp syrup sweetener
METHOD
1 Melt the oil (if it has solidified) in a small saucepan over low heat, then pour into a bowl to cool a little.
2 Add the coconut, cacao powder, puffed grains, currants and sweetener, and stir well to combine. Spoon this mixture into 12 small patty cases, then pop into the fridge for about 30 minutes, or the freezer for 10 minutes, until set. Store in the fridge or freezer for up to 3 months.
