Feeds 4 Wiggles
Ingredients:
- 1 medium zucchini
- 1 large carrot
- 8 eggs
- 1⁄2 cup grated cheddar

Coarsely grate zucchini and carrot.

Show your child how to crack one egg into a medium bowl.
- Child
Crack the rest of the eggs into the bowl. Check the bowl for any pieces of shell. Whisk eggs until combined.

Pour a quarter of the egg mixture into a heated oiled small frying pan. Cook over medium heat until omelette is almost set. Scatter a quarter of the zucchini, carrot and cheese over half of the omelette. Fold omelette in half. Continue cooking until the cheese melts. Slide omelette onto a plate and cover to keep warm. Repeat the process with the remaining ingredients to make three more omelettes. Now, 1, 2, 3, Wake Up, Lachy!
- Wiggly tips
This is a quick and easy before-school tummy-filler. Add crisp bacon or even a few pan-fried mushrooms to the omelette, if you like.
