INGREDIENTS
40ml Milagro Anejo Tequila
20ml Cointreau
15ml Aperol
15ml Lemon Juice
25ml Orange Juice
15ml Spice Syrup
Shake over ice and strain into glass
To create the foam combine:
Egg whites
Lemon Juice
Maldon Sea Salt
Spice Syrup
the spice syrup
Coriander Seeds
Cardomon Pods
Star Anise
Vanilla Pods
Citrus Zest
Organic Raw Sugar
METHOD
1 Brown the spices very lightly in a pot, add a water to make a tea
2 Add citrus zest and vanilla and infuse, adding the sugar last
3 Bring to heat and slightly reduce
4 Pour into a zip lock bag to infuse overnight
