Quick & Simple Cheat's Fruit Flan

INGREDIENTS
500g crushed white cookies
150g melted butter (salted or unsalted are both fine)
Fresh fruit to decorate – use the stuff that’s in season for the best flavors!
2 100g packets of vanilla pudding mix
Whole milk to make up the pudding
Tip: Reduce the required quantity of milk by approximately 1/3. If the pudding mix calls for 700ml milk, use 500ml per packet so you end up with a thicker, more custard-y pudding

METHOD
1 Combine the butter and crushed cookies and spoon into a 13” x 5” tart pan with a removable base. Press down till firmly compacted
2 Sprinkle pudding mix over chilled whole milk while whisking vigorously to avoid lumps
3 Pour pudding mix into tart base and refrigerate for 15 minutes
4 Slice your fruit and apply neatly to the top of the pudding to create a simple, no-fuss fruit flan in minutes.
5 Chill 1-2 hours prior to serving
