Some protein, fibre and healthy fats are in this sugar-free nutty chocolate bark recipe too for a balanced after dinner treat.
Sugar Free Nutty Chocolate Bark Recipe
INGREDIENTS
250 g dark cooking chocolate – look for varieties containing a cocoa content of at least 70% – to keep the sugar content down
1 No Added Sugar Cereal Bar with Nuts (preferably full of puffed quinoa, almonds and peanuts, this adds a nice crunch)
1-2 Tbsp shredded coconut
You may also like to add any other ingredients to suit your taste
METHOD
1 Line a baking tray with baking paper.
2 Break the chocolate into pieces and melt either on the stovetop or in the microwave. To melt on the stovetop, place chocolate in a heatproof bowl on top of a pot of simmering water – Allow the chocolate to melt, stirring a few times with a wooden spoon; Make sure the water doesn’t come in contact with the bowl. Or, if you’re using a microwave, place the chocolate in a deep, microwave-safe bowl, cover and microwave on 50% power for 1 minute; Remove from microwave, stir, cover and microwave again on 50% power for another 10-15 seconds. Repeat until all of the chocolate has melted.
3 Pour the melted chocolate onto your lined baking tray, gently moving the tray from side to side so that it’s evenly covered.
4 Sprinkle the broken up cereal bar on top of the chocolate base, followed by the shredded coconut and any other ingredients you might fancy.
5 Cover and refrigerate for at least an hour, or until chocolate has set.
6 Cut into squares or break into shards and serve!
