Chiva Som’s Flourless Chocolate Cake Recipe from celebrated Chef Sinchai Srivipa is made with health in mind. So rather than white sugar, there is brown sugar but yet it’s still every chocolate lover’s dream come true. Try it and see for yourself.
INGREDIENTS
Chocolate Flourless sponge
10 Eggs
200 g. Organic brown sugar
75 g. Cocoa powder
25 g. Corn flour
1 tsp. Baking powder
Chocolate mousse
110 g Dark Chocolate 70.4%
50 g Milk
110 g Whipping Cream
For Decorate
200 g Strawberry
INSTRUCTION
Flourless Chocolate sponge
1. Pre heat oven at 180C
2. In an electric mixer, whisk whole egg with sugar until egg ribbon stage.
3. Sift Cocoa powder and corn flour together in to medium bowl
4. In egg mixing bowl, gently fold in mixed flour in to egg mixture.
5. Pour into greased and floured 9” cake pan.
6. Bake in a preheated oven for 20 – 25 minutes or until a wooden pick comes out clean when inserted.
7. Leave to cool on a wire rack, set a side.
Chocolate Mousse
1. In mixing bowl, Whisk whipping Cream until soft peak stage. Set a side
2. Add chocolate to the top of a double boiler over barely simmering water.
3. Stir gently and frequently until the chocolate has completely melted. Then add warm milk into
chocolate, mixed well.
4. The chocolate should still be runny but warm (around 40C). Pour chocolate into whipped cream
mixture. Fold through.
Finish
1. Dived chocolate flourless sponge into 2 layer.
2. In 9” ring mold, lay 1st chocolate flourless sponge into bottom, pour 1/3 of chocolate mousse into mold.
3. Add strawberry on top of chocolate cake, cover strawberry with 1/3 of chocolate mousse.
4. Place 2nd sponge on top of chocolate mousse then pour less of chocolate mousse.
5. Keep chocolate cake in refrigerator until chocolate mousse is set.
6. Before serve sprinkle with cocoa powder and decorate with strawberry.
