INGREDIENTS
150 g (approximately 25) garlic cloves, peeled
250 ml coconut oil
METHOD
1 Place the garlic cloves and coconut oil in a saucepan over very low heat (you do not want the oil to boil).
2 Cook the garlic slowly and gently for 1 – 1 ½ hours, or until the garlic is silky and soft. Store the garlic confit in the oil in a sealed jar in the fridge. The garlic confit will keep for up to 3 months refrigerated.
Thermomix Version
1 Place garlic cloves and oil in Thermomix bowl and cook 90 mins/90°C/reverse/speed soft.
