Spice up your weeknight dinners with this mouth-watering twist on a classic favourite. Celebrated Sri Lankan-Australian chef Peter Kuruvita brings his signature flair to the table with an Air Fried Butter Chicken that’s big on flavour and light on the oil. Known for his time at Sydney’s Flying Fish and his popular TV series My Sri Lanka, Peter has spent decades sharing the vibrant flavours of his heritage. Think a rich gravy, warm spices and tender marinated chicken. Made even easier with your air fryer.

INGREDIENTS

  • 1kg chicken wings split into flats and drumettes
  • 2 tablespoons Butter Chicken Masala from The One & Only Spice Stack
  • Olive oil in a spray bottle
  • Your favourite hot sauce
  • Steamed rice

INSTRUCTIONS

  1. Preheat the air fryer to 190 degrees celcius. When heated, spray the basket with cooking spray.
  2. Pat the chicken wings dry. Then transfer them to a large bowl. Toss the wings in the Butter Chicken Masala rub.
  3. Place the chicken wings in the air fryer so they are not touching. Cook for 10 minutes, then increase the temperature to 400°F, and cook until crisp and golden, about 6-8 more minutes.
  4. Garnish the chicken wings with parsley, and serve with rice on the side, if desired.
