Upgrade Your Mother’s Day Breakfast in Bed Game with These Orange & Kiwi Fruit Pikelets

There’s something timeless about Mother’s Day Breakfast in Bed. And, these Nutella Orange & Kiwi Fruit Pikelets are a fresh take on a classic treat. Inspired by the zesty sweetness of New Zealand’s beloved kiwi fruit, this recipe also nods to Nutella’s new limited-edition jar collection, which celebrates five iconic Aussie locations, from Kangaroo Island to Sydney Harbour. INGREDIENTS

1 cup self raising flour

An egg

1 teaspoon raw sugar

3⁄4 cup buttermilk

Spray coconut oil

2 small kiwi fruits, 6 slices each

1 small orange, zested and juiced (Optional – roughly chopped 1tbsp toasted macadamias)

60g Nutella

INSTRUCTIONS

1. Zest and juice a small orange and set aside separately. Cut your 2 x kiwis into 12 slices

2. Combine the flour, egg, sugar and buttermilk in a bowl. Add the orange juice and half the zest.

3. Grease a fry pan with the spray coconut oil over medium heat. Also grease your egg rings if you’re using them. Place a slice of Kiwi to the middle of the ring and add 1 tablespoon of the pikelet mixture to each egg ring. Cook until bubbles arise on the surface and the rim of the pancake has solidified.

4. Pop the pikelet out of the egg ring and flip over (being careful not to dislodge the kiwi slice) and cook for a further 2 minutes or until golden brown.

5. Place on a plate and serve drizzled with 15g of Nutella® per pikelet and a sprinkle of orange zest and optional chopped macadamias.
