INGREDIENTS
¼ cup chia seeds
1 cup coconut milk
2 tbsp maple syrup
1 passionfruit, pulp only
½ peach, diced
1 passionfruit, pulp only, to serve
¼ cup Brazil nuts, roughly chopped, to serve
INSTRUCTIONS
1. Combine the chia seeds, coconut milk, maple syrup, passionfruit pulp, and peach in a small bowl.
2. Divide the mixture between 2 x 1-cup glasses or Mason jars.
3. Cover and leave in the fridge overnight to set.
4. In the morning, serve with passionfruit pulp and a sprinkle of Brazil nuts.
