They’ve gone from starring on the football field to wowing on the international catwalk, they’ve even shown their dancing skills on TV. But who know that Zac and Jordan Stenmark were also as focussed in the kitchen as they are in the rest of their busy lives?
With an eye to eating healthily and keeping up their energy levels while coping with their very full schedules, the Stenmark twins popped in to prepare one of their favourite pick-me-ups: Stenmark Protein Balls. Here they whip up a batch just for us.
Serves 12 portions/balls
INGREDIENTS
Base
1 1/2 cup hazelnuts
1/2 cup raw cacao powder
1/3 cup coconut
1 1/2 teaspoons cinnamon
2 cups pitted dates
1 or more tablespoons of water (if needed to thicken the mixture)
Topping
1/2 cup hazelnuts
1/4 cup coconut
2 teaspoons coconut oil, melted
METHOD
1 In a food processor, blend hazelnuts, cacao, coconut and cinnamon until finely ground.
2 Add dates 1/4 cup at a time, processing after each addition until blended. Add some water at this time if needed.
3 Firmly press mixture in to an 8×8 pan. Sprinkle topping and lightly press down then refrigerate for 1 hour to set.
4 Cut into small squares.
5 Alternatively roll mixture into balls, cover in coconut topping then refrigerate for 1 hour.
