Chia Seed Pudding With Blackberry And Lime Coulis

A great breakfast that you can prepare the night before, this is based on chia seeds, which are a rich source of antioxidants and fibre (with the help of the chia seeds, this pudding provides over a third of your recommended daily fibre intake).

When soaked in a liquid they become gelatinous, with a texture very similar to that of tapioca. The blackberry coulis adds a sharpness that is balanced by the addition of honey.
