‘Fusion Is Confusion’ – Michel Roux Goes Chef-To-Chef With Sharone Hakman in Vietnam

When three-Michelin star chef Michel Roux talks – chefs and foodies worldwide put down their knives and listen.

In this journey of the senses, chef Sharone Hakman explores the vibrant city of Danang, Vietnam with French-born culinary legend Michel as they go bench-to-bench, knife-to-knife and chef-to-chef on a unique culinary journey exploring the abundance of local ingredients and incredibe flavours of Vietnam.

With gastronomic British institutions La Gavroche and The Waterside Inn well-established and  France’s premier order, a Chevalier de la Légion d´Honneur (France’s premier order) and an honorary OBE (Order of the British Empire) under his apron, Michel’s latest venture is his first foray into Asia. The elegant fine dining restaurant La Maison 1888, at Vietnam’s magnificent InterContinental Danang Sun Peninsula resort has given Michel an opportunity to really “bring something to the country”, he says.

“It’s a very young population, a young country with young people edgy to learn. I’m doing (in Vietnam) what I did in the UK 40 years ago. I feel I can bring something to the country.”

Nowhere in Vietnam is changing as fast as Danang, and while the country and its people may be young, the cuisine is steeped in culture and tradition and together, Sharone and Michel explore the local flavours this wonderful part of Asia has to offer. As Michel takes Sharone through the local markets and gathers fresh fish from the first catch of the day, the two chefs go head-to-head to put their own twist on a local snapper dish. As Michel says, ‘fusion is confusion’…
