In fact, according to Anna Berlyn, owner of GS Deli, this New York staple is actually the perfect blank canvas for creative fillings that can range from savoury Aussie classics to sweet surprises. Given that this carby comfort is her proverbial bread and butter, here are Anna’s top six suggestions for interesting bagel fillings – that aren’t salmon and cream cheese!
1. Crispy Fish
If you love a fillet o fish, this is a bagel twist you won’t want to miss. Start with a golden, crispy fish fillet, and balance it with a creamy slice of cheese and the tang of tomato salsa. Add in some crunchy iceberg lettuce and a dollop of tartar sauce, and you’ve got a hearty, seaside-inspired bagel that’s as satisfying as it is flavourful.
2. The Veg
Perfect for those who love a fresh, veggie-packed bite, GS Deli’s “Veg” bagel is Anna’s take on the classic Aussie salad sambo. This veggie-filled delight combines creamy cream cheese with crisp carrot, earthy beetroot, and tangy red onion. Alfalfa sprouts and tomato add a bit of bite. “It’s a colorful, refreshing bagel that’s both filling and light,” says Anna, who also suggests that this bagel is an excellent way to experiment with one of GS’ signature smears. “While we traditionally recommend a spread of vibrant pesto to bring everything together, one of our other specialty schmears – like dill pickle schmear or truffle schmear – would also work.”
3. BEC
A breakfast bagel with a twist, the “BEC” takes inspiration from the beloved BLT, but swaps out the lettuce for a rich, runny egg. Crispy bacon and Swiss cheese bring the savoury satisfaction, while a generous spread of tomato relish adds just the right amount of sweetness and tang. It’s everything you love about a breakfast sandwich, reinvented for bagel lovers.
4. Avo Bruschetta
Avo toast gets a “hole” new makeover when you swap bread for a toasted bagel. Like GS Deli’s “Avo Bruschetta” “The creamy avocado is topped with ripe tomato, crisp onion, and a squeeze of fresh lemon, offering a zesty, refreshing flavour that’s perfect for brunch or a light lunch,” says Anna.
5. Nutella
Finally for something on the sweeter side, the classic combination of Nutella on bread never disappoints and is one of GS Deli’s most popular orders for interesting bagel fillings according to Anna. “We find that if people want something sweet, they will follow with a sweet bagel option after their savoury option,” she says. In this instance, the contrast between the rich hazelnutty spread and softness of the bread makes this filling a timeless choice.
