Lorna Jane’s Healthy Ginger Balls Recipe.
Makes 14 balls
Preparation time 25 minutes (+ refrigeration or freezing)
INGREDIENTS
1 cup (140g) macadamias
½ cup (70g) shelled pistachios
6 fresh dates (120g),seeded, chopped coarsely
1cm (1/2 inch) piece fresh ginger (5g), grated
4 tablespoons finely chopped
cacao butter
½ cup (50g) cacao powder
2 teaspoons coconut sugar
METHOD
1 Process nuts, dates and ginger until mixture forms a coarse, rollable dough.
2 Roll level tablespoons of mixture into balls. Place on baking-paper-lined tray; refrigerate or freeze 30 minutes or until firm.
3 Meanwhile, stir cacao butter in a small heatproof bowl over a small saucepan of simmering water; remove from heat, stir in sifted cacao powder and sugar until smooth.
4 Coat each ball in cacao mixture. Return to tray; freeze until chocolate sets.
