Today’s recipe is Jack O Lantern cupcakes with a twist – we’re baking them straight into hollowed out oranges for a delicious, choc orange dessert with a fun-factor that’s sure to get your guests gasping at your ingenuity and overall kitchen prowess!

INGREDIENTS
30g | 1oz cocoa (unsweetened)
1 large egg
120g | 4oz self raising flour (or use plain flour and half a teaspoon of baking powder)
65g | 2oz butter
65g | 2oz sugar
1/2 tsp vanilla essence
1/3 cup water or juice from your oranges
METHOD
1 Combine all ingredients in a mixing bowl and beat on high speed until the mixture lightens in colour
2 Slice a small sliver from the bottom of each orange to create a flat base
3 Cut the top away and core out 6 large oranges, leaving a small amount of orange flesh inside – keep the tops in tact
4 Spoon the mixture into each orange filling approx 2/3 full
5 Bake at 350 for 20 minutes or until the top springs back when touched – Allow to cool
6 Cut a green candy strap into a star shape
7 Use a skewer to make a hole in the centre of the top of the cut off orange slice
8 Place a pretzel stick through the candy strap and into the orange slice, before affixing to the cooked, cooled cupcake
9 Use a marker to draw Jack o Lantern faces on the front of cooled cupcakes & serve
Cooks tip
I’d recommend making these no more than 24 hours prior to serving and store them covered at room temperature.
