These early morning treats from the Sydney nutritionist and best-selling author prove just how indulgent and delicious healthy living can be, even at 7am when you’re still in your PJs.

This recipe is high in fibre and good fats, which will help kick those sugar cravings and keep you feeling full.

Jess Sepel’s Healthy Breakfast Brownies

This makes 8 big brownies. I recommend doubling the recipe for a bigger batch.

  • 1 cup Walnuts
  • 2 heaped tbsp. cacao
  • 1 cup medjool dates, pitted
  • a pinch of sea salt
  • ½ tsp. cinnamon
  • ½ cup rice puffs/quinoa puffs
  • 1 tbsp coconut oil
  • 2 tbsp Ground flaxseed
  • ¼ -1/3 cup filtered water – texture should be moist and chunky – not runny.

Optional topping:

2 tbsp almond butter

1 tbsp cacao, sprinkles

shake of cinnamon

Add all of the above ingredients to the food processor (except the topping ingredients)

Mixture should become firm but soft – sticky/doughy texture.

Line a small square dish/tray/bread tin with baking paper and press the mixture in firmly to form a square shape.

Spread the almond butter over the mixture and then sprinkle the cacao and cinnamon over.

Cover and refrigerate for at least 30 minutes

Take out the fridge and cut into bars/brownie slices
