So the news of his passing on December 25, 2023 was a huge saddness to us all. Bill Granger was an Australian icon, a chef and food writer, who was loved by family cooks and sophisticated foodies alike, for his relaxed style and fresh local-ingredient led dishes. Bill’s sunny, easy-going approach to food is an essential element in his enduring popularity. We thank Bill for bringing us all so much joy from his cooking.

Bill says during the week, it’s all about cooking in the oven and shares these 5 quick meals can which can be done in under 45mins.
1 Braised chicken. Braise 500grams of chicken pieces in olive oil on the stove. Then pop into a baking dish with with chopped potatoes, some herbs, (parsley, thyme or oregano) and garlic, and bake at 180degrees for 45mins. Once cooked, throw in some olives and serve with salad and greens.
2 Baked fish with potatoes. Thinly slice potatoes, roast for half an hour. Throw in some cherry tomatoes, cook for another 10 mins, place some fish fillets over the top and cook for another 10 mins.
3 Baked tuna risotto with tomatoes, tuna and zucchini.
4 Stir fry chicken with basil. Stir fry some chicken strips with garlic, onion, basil and green beans. If liked, add some fresh chilli to the wok towards the end. Serve with rice.
5 Soy beef with Asian greens. Sear 2 sirloin steaks in oil for a few minutes on each side. Add soy sauce once the steaks are cooked. Rest for 5 mins and get on with steaming some buk choy or other Asian greens. Throw into a bowl and add some soy, lemon over the greens. Slice the steak into strips and serve with steamed rice.
