Recipe For Walnut Marsala Cake That Will Tingle The Tastebuds

Rich with buttery walnuts and Marsala, an Italian fortified wine, this cake comes together very quickly with Smeg’s hand blender food processor attachment, using the S-blade.

Ingredients

  • 2½ cups (225g) walnut pieces
  • 2/3 cup demerara sugar
  • 1 cup (150g) plain flour
  • 1½ teaspoons baking powder
  • 1 egg 150g butter, softened
  • 1 tablespoon Marsala

Instructions

Preheat the oven to 170⁰, grease a 20cm cake tin and line the base with baking paper.

Affix the s-blade to the hand blender food processor. Place walnuts, sugar, flour and baking powder in the bowl and pulse until combined and the walnuts are finely chopped. Add egg, butter and marsala. Process on low speed until the mixture is smooth.

Spoon mixture into prepared tin and bake for 35 minutes until golden. Serve sliced with mascarpone and an espresso coffee.
