Try this tasty and healthy vegan recipe for Peanut Butter Fibre Bars and it only has four ingredients!
Makes 12
INGREDIENTS
2 cups old-fashioned oats (gluten-free if needed)
½ cup natural crunchy peanut butter
½ cup raw honey (use agave for vegan)
¼ cup chocolate chips (use dairy-free if needed or raisins)
1 tablespoon psyllium husk
METHOD
1 Line the bottom and sides of a loaf tin with baking paper.
2 Preheat oven to 180˚C. Combine all ingredients a bowl and mix well.
3 Press the mixture firmly into prepared tin.
4 Bake for 20 minutes or until the edges barely start browning.
5 Cool for 10 minutes and cut into bars. Store in a cool dry place for up to a week.
Optional: Add ½ teaspoon of cinnamon to the mixture.
