4 x Simson’s Pantry High Protein White Wraps
400g firm tofu, pressed and cut into thick strips
A cup of corn kernels (fresh or drained canned)
1 tsp ground cumin
1 tsp smoked paprika
½ tsp ground coriander
½ tsp garlic powder
Salt and pepper, to season
1–2 tbsp olive oil
Fresh salsa
½ cup cherry tomatoes, finely chopped
¼ cup red onion, finely diced
Handful fresh coriander leaves
Squeeze of lime
Creamy dressing
⅓ cup Greek yoghurt (or plant-based alternative)
1 tbsp mayonnaise (or vegan mayo)
1 tsp lime juice
Pinch of salt
INSTRUCTIONS
1. Cook the tofu and corn: Heat olive oil in a pan over medium heat. Toss tofu with cumin, paprika, coriander, garlic powder, salt and pepper.
Cook for 6–8 minutes, turning occasionally, until golden and lightly crisp on the edges. Add corn in the final minute to warm through.
2. Prepare the salsa: Combine tomato, red onion, coriander and a squeeze of lime. Season lightly.
3. Make the dressing: Stir together yoghurt, mayonnaise and lime juice until smooth.
4. Warm the wraps: Heat Simson’s Pantry White Premium Wraps until soft and pliable.
5. Assemble: Spoon spiced tofu and corn down the centre of each wrap. Top with fresh salsa and a drizzle of dressing.
6. Grill burrito: Fold tightly and place on a hot grill pan or sandwich press for 1–2 minutes per side until lightly toasted with golden grill marks.
7. Serve: Slice burrito in half and serve warm with lime wedges and extra salsa on the side.
