Yeehaw, this one’s got all the fixings! Australia has well and truly gone country, with Southern-inspired food, BBQ flavours and backyard cookout culture having a serious moment. And what better way to get in on the action than with a dinner that brings those big, smoky flavours straight to the table?
These golden, gooey mozzarella cauliflower bites ride shotgun with a vibrant Southwest bean salad that’s got more kick than a stubborn mule. We’re talkin’ smoky BBQ sauce for that slow-cooked campfire flavour, a lasso of hot sauce to keep things wild and crunchy corn chips for good measure. It’s all part of HelloFresh’s limited-edition Country Cookout Box, bringing a taste of the American South to Aussie dinner tables without requiring hours at the stove.
INGREDIENTS
For the mozzarella-cauliflower bites
- 1 packet mozzarella cauliflower bites
- Olive oil, for cooking
For the Southwest bean salad
- 1 packet red kidney beans, drained and rinsed
- 1 tin sweetcorn, drained
- 1 packet snacking tomatoes, halved
- 1 packet gourmet leaf mix
- 2 tbsp mayonnaise
- White wine vinegar, to taste
- Olive oil, to taste
- Salt and pepper, to taste
To serve
- 2 tbsp BBQ sauce
- 1 packet hot sauce
- 1/2 packet corn chips
INSTRUCTIONS
- Cook the cauliflower bites: Preheat the air fryer to 200°C. Place the mozzarella cauliflower bites in the basket and cook for 10-12 minutes, or until golden brown and heated through. Alternatively, place them on a lined oven tray and bake at 200°C for 10-15 minutes.
- Char the corn: Meanwhile, heat a large frying pan over high heat. Add the sweetcorn and cook for about 3 minutes, tossing occasionally, until lightly browned.
- Cook the beans: Add a drizzle of olive oil and the red kidney beans to the pan. Cook for 2-3 minutes, tossing occasionally, until warmed through. Transfer the corn and beans to a large bowl and allow to cool slightly.
- Make the salad: Add the gourmet leaf mix, tomatoes, mayonnaise, a drizzle of white wine vinegar and olive oil to the bowl. Toss everything together and season with salt and pepper.
- Serve: Divide the Southwest bean salad between bowls and top with the mozzarella cauliflower bites.
- Bring the heat: Drizzle over the BBQ sauce and hot sauce, adjusting the hot sauce to suit your spice tolerance. Crush the corn chips over the top for some extra crunch and serve immediately.
