When it comes to winter comfort food, few dishes deliver quite like French onion soup. Rich, deeply savoury and wonderfully warming, it’s the kind of recipe that fills the kitchen with irresistible aromas before the first spoonful is even served. And according to  modern matriarch, social media personality and Australian Onions Ambassador and home cook Mary Kalifatidis, the secret to that signature depth of flavour starts with one humble ingredient.

“When the temperature drops, my absolute favourite way to ward off the chill and boost my family’s health is by heading straight for the kitchen,” says Mary. “For me, winter wellness is all about hearty, nourishing comfort meals that make the whole house feel warm and inviting. Whether I’m hosting a big, lively Sunday family lunch or setting up a casual, last-minute dinner with friends, my winter entertaining always revolves around dishes that simmer slow and taste like a hug.”

That philosophy comes to life in her French Onion Soup with savoury beef meatballs – a family favourite that returns to the table every winter. “It’s a recipe staple we always come back to in winter; hearty and nutritious. Simple and delicious,” she says.

At the heart of the dish are Australian Onions, which Mary describes as the foundation of almost every comforting meal she cooks. “In my kitchen, onions are always the first ingredient and the ultimate flavour foundation for everything – from rich stews and slow-cooked casseroles to vibrant Sunday roasts and comforting mid-week soups,” she explains. “Not only do they fill the kitchen with that unmistakable, mouth-watering aroma the second they hit the pan, but they are also a simple, everyday powerhouse for seasonal goodness. A single medium-sized onion counts as two serves of vegetables, making it the easiest way to elevate the nutrition of your favourite winter warmers.”

INGREDIENTS

For the Soup
● 5 large brown onions, thinly sliced
● 70g butter
● 2 tablespoons olive oil
● 3 bay leaves
● 1 teaspoon sugar
● 1 tablespoon balsamic vinegar
● 2 litres beef stock
● A few sprigs fresh thyme
● Salt and pepper, to taste
● Grated Parmesan or Pecorino, to serve
● 1 cup cooked risoni (optional)

For the Meatballs
● 300g beef mince
● 1 small brown onion, finely chopped and lightly browned
● 1 egg
● 1/3 cup breadcrumbs
● 1 tablespoon fresh thyme leaves, chopped
● Salt and pepper

INSTRUCTIONS

Step 1: Prepare the Soup Base

  1. Melt the butter in a large heavy-based pot over medium heat. Allow it to brown slightly,
    then add the olive oil.
  2. Add the sliced onions, sugar and a pinch of salt. Cook gently for 20 minutes, stirring
    occasionally.
  3. Add the thyme sprigs and continue cooking for another 15 to 20 minutes until the onions
    are deeply golden, soft and jammy. Be careful not to let them burn.
  4. Stir in the balsamic vinegar, ensuring any caramelised bits on the bottom of the pot are
    incorporated.
  5. Add the beef stock and bay leaves. Bring the mixture to a gentle simmer.

    Step 2: Prepare and Cook the Meatballs
  6. In a large bowl, thoroughly combine the beef mince, the finely chopped and lightly
    browned small brown onion, the egg, breadcrumbs, chopped fresh thyme leaves, and a
    pinch of salt and pepper.
  7. Roll the mixture into small, uniform meatballs.
  8. While the soup is simmering, place the meatballs on a lined baking tray.
  9. Bake at 200°C (180°C fan-forced) for 10 to 12 minutes, until lightly browned. They do not
    need to be fully cooked through at this stage.

    Step 3: Finish the Soup
  10. Add the browned meatballs to the simmering soup.
  11. Simmer gently for 1 hour to let the flavours completely combine.
  12. Taste and adjust seasoning with additional salt and pepper if required.
  13. Stir through the cooked risoni, if using.

    Step 4: To Serve
  14. Ladle the soup and meatballs into bowls and top generously with grated Parmesan or Pecorino.
    Serve hot with warm crusty bread for dipping.
