Looking for a little long-weekend cooking inspiration? You could do worse than taking your cues from Lucy Tweed, creator of Every Night of the Week – an Instagram account full of recipes for people who don’t like recipes!

Now Lucy is bringing her effortless, flavour-first approach to Ondine Flat Peaches, showing how their sweet, juicy taste can turn a simple pizza into a show-stopping summer treat. Ondine Flat Peaches are the addition to your pizza you didn’t know you needed. The secret? They’re sweet and juicy whether eaten crunchy or soft. For pizza, grab a firm Ondine and slice away. Paired with salty prosciutto, Ondine Flat Peaches deliver a sweet hit with no mess – the kind of flavour combo that will have your guests sticking around for another slice. Or four!

INGREDIENTS

  • Store-bought pizza base
  • Olive oil
  • Buffalo mozzarella, torn
  • Extra-fine San Daniele prosciutto
  • Ondine Flat Peaches, thinly sliced
  • Fresh basil leaves
  • Parmigiano Reggiano, finely grated
  • Extra virgin olive oil, to drizzle
  • Chilli flakes (optional)

INSTRUCTIONS

  • Lightly brush the pizza base with olive oil.
  • Bake until puffed and golden.

  • Add curls of extra-fine San Daniele prosciutto.
  • Arrange the thinly sliced Ondine Flat Peaches on top.
  • Finish with fresh basil leaves.
  • Sprinkle with Parmigiano Reggiano.
  • Drizzle with extra virgin olive oil.
  • Add a pinch of chilli flakes, if desired.
