Kamalaya Detox Garden Salad With Seeds And Fruit

A blend of fresh salad greens with seeds and fruits to nourish and refresh. Kamalaya’s Detox Garden salad is a flavourful blend of ingredients to detoxify and heal. 

INGREDIENTS

Salad
Baby Cos Lettuce (picked and washed) 40g
Green Oak Lettuce (picked and washed) 40g
Red Oak Lettuce (picked and washed) 40g
Rocket Salad (picked and washed) 20g
Rose apple (peeled and cubed) 60g
Avocado flesh (cubed) 60g
Beetroot (cooked, peeled and cubed) 100g
Pumpkin seeds 10g
Sunflower seeds 10g
Flax seed (ground) 5g
Wolfberry (Goji berry) 10g

Coconut Water 120ml
Apple cider vinegar 80ml
Virgin Olive Oil 100ml
Wasabi Powder to taste
Lime juice to taste

METHOD
1. Prepare the dressing by placing all ingredients, except olive oil, into a blender and blend on medium setting for about 30 seconds. Switch to the lowest setting, and very slowly pour the olive oil to form an emulsion. It is important that the oil is added slowly, otherwise the dressing will separate.
2. Now, prepare the salad. Tear the baby cos, green oak and red oak leaves into bite sized pieces and leave the rocket leaves whole. Place all the salad leaves in a large salad bowl and toss lightly. Sprinkle the salad leaf mix with the rose apple, avocado, beetroot, seeds and wolfberries. Lightly ‘lift’ the salad with your fingers to distribute the ingredients. Drizzle with salad dressing just before serving.
