This recipe is incredibly low in sugar. Naturally sweetened with warming cinnamon, the berries gently burst in your mouth as you eat them, offering a punch of flavour and skin-loving nutrients.
The Ingredient Checklist
- 2 cups (200 g) almond meal
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- A pinch of salt flakes
- 1 tablespoon maca powder
- 2 cups (500 ml) coconut milk
- 1/2 cup (60 g) fresh or frozen raspberries
- 1/2 cup (75 g) fresh or frozen strawberries, quartered
- 2–3 drops of stevia (optional)
- 1/2 cup (80 g) fresh blueberries (to serve)
- A handful of chopped macadamia nuts (to serve)
- Fresh mint leaves (to serve)
Lola’s Pro-Tip: If you’re really craving sweetness (or are just starting to cut sugar out of your diet), adding a few drops of stevia is a brilliant way to sweeten this up without impacting your blood-glucose levels.
Method
1.Combine & Heat:Step 1.
Place the almond meal, cinnamon, nutmeg, salt, maca, and coconut milk into a small saucepan over medium heat.
2.Thicken & Simmer:Step 2.
Slowly bring the mixture to a gentle boil, stirring continuously so it doesn’t stick. Boil for 1 minute, then reduce the heat to low and simmer for another 2 minutes.
3.Fold in the Berries:Step 3.
Gently stir in the raspberries and strawberries. Cook for 1 minute more (or 2 minutes if you are using frozen berries).
4.Sweeten & Serve:Step 4.
Taste the porridge. If you prefer a sweeter finish, stir in a few drops of stevia. Divide the warm porridge between two bowls, top with the fresh blueberries, scatter with the chopped macadamia nuts, and finish with a few torn mint leaves.
