Breakfast doesn’t have to mean choosing between something nutritious and something you actually look forward to eating. This Brownie Breakfast Protein Parfait gives you the best of both worlds, layering creamy Greek yoghurt and fresh berries with chunks of ReFil’s Choc Full of Brownie protein bar. With its chewy, fudgy chocolate texture, cashew crunch and brownie-inspired flavour, the bar brings a decidedly indulgent twist to the morning parfait – while packing in 20g of protein and 17g of fibre per bar.

INGREDIENTS

  • 1 ReFil Choc Full of Brownie protein bar
  • 300g Greek yoghurt
  • 1 tbsp cocoa powder
  • 1 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • ½ cup strawberries, sliced
  • ½ cup raspberries
  • 2 tbsp dark chocolate, finely chopped
  • 2 tbsp roasted cashews, roughly chopped

INSTRUCTIONS

  1. Make the chocolate yoghurt: Combine the Greek yoghurt, cocoa powder, maple syrup and vanilla in a bowl. Stir until smooth and creamy.
  2. Prep the brownie bar: Cut the ReFil Choc Full of Brownie bar into small bite-sized chunks. Keep a few larger pieces aside for the top.
  3. Build the parfaits: Divide half the chocolate yoghurt between two glasses or jars. Add half the berries, followed by half the chopped protein bar, chocolate and cashews.
  4. Add another layer of chocolate yoghurt, then finish with the remaining berries, brownie bar pieces, chocolate and cashews.
  5. Serve immediately, or refrigerate for up to a few hours before serving.

Tip: For an extra brownie-like finish, warm a couple of pieces of the ReFil bar for a few seconds in the microwave before adding them to the top. They’ll become deliciously soft and fudgy against the cold yoghurt.
