Mumbai-born Chef Garima Arora is the mastermind behind the two-Michelin-starred restaurant Gaa, in the heart of bustling Bangkok. Here, she artfully blends Indian techniques with Thai ingredients to create a modern, predominantly vegetarian tasting menu.

This includes this Green Chilli Chutney. Combining the fire of Indian green chillies with the tang of lime juice, the sweetness of golden brown sugar, and the umami hit of black salt, this chutney is a masterclass in balance. It’s perfect as a zesty dip, try it spread over warm sourdough bread topped with cheese for a flavour-packed twist, or use it as a spicy, tangy accompaniment to your favourite pizza.

It also pairs beautifully with grilled vegetables, roasted meats, or as a flavour boost in sandwiches and wraps. Whatever you choose, this chutney brings a lively balance of sweet, sour, and spicy notes that elevate every bite – and are a modern condiment that pays homage to tradition while delivering a punchy, unforgettable flavour.

INGREDIENTS

110 g Green Jinda Chili*

40 g Long Green Chilli**

30 g Lime Juice

11 g Black Salt

20 g Golden Brown Sugar

300 ml Canola Oil

INSTRUCTIONS

  • Blend everything together, strain and reserve the pulp, making sure to try the chili before use as the level of spiciness may vary from the batch of chili being used.
  • The taste should be a balance of sweet, spicy, sour all at the same time.
  • Best to be eaten with some of your favorite crisps, over a sourdough with cheese or
    alongside your favorite pizza!

* Note: Very spicy and most commonly used in Thai cooking.

** ** Note: Medium Hot chilli – usually dark green in colour.

Born and raised in Mumbai, Chef Garima Arora’s culinary journey began with childhood meals inspired by her father’s travels, eventually taking her from journalism to Le Cordon Bleu in Paris, and later to acclaimed kitchens like Noma. Her restaurant Gaa, nestled in a beautifully reimagined traditional Thai house in Bangkok, is a reflection of her passion for storytelling through food. Since opening in 2017, Gaa has earned two Michelin stars, making Garima the first and only Indian woman to achieve this distinction
