Italian Mamma’s Tiramisu Recipe – A Dessert Classic

If you want to make a Tiramisu Recipe then check this delicious one out. Tiramisu is a Dessert Classic and best of all it is easy to make! One of my favourite people that I met during my time on MasterChef was Adele.

We called her the Italian Mamma and she was, without doubt, the heart of the MasterChef household. She has shared her famous tiramisu recipe with us. A gratifying tiramisu uses good Savoiardi biscuits, which are an Italian sponge biscuit. With Adele’s permission I have halved the Savoiardi biscuits as I find them to be quite thick. Being an absolute chocolate fiend, I have added more chocolate and reduced the amount of sugar in the original recipe.

INGREDIENTS

5 eggs, separated
120g (4oz) caster (superfine) sugar
350g (12oz) mascarpone cheese
300ml (10.fl oz) fresh brewed coffee or 300ml
(10 1/2 fl oz) hot water and 6 tablespoons instant coffee
1/4 cup sugar, extra
2 tablespoons Marsala
10 sponge biscuits (Savoiardi)
150g (5oz) dark (semi-sweet), 70% cocoa, chocolate, chopped up into slivers

METHOD
1
Beat egg yolks with the sugar until sugar has dissolved and mix is light and fluffy. Add the mascarpone and mix in well. Whisk egg whites in a clean glass bowl using an electric beater until soft peaks form, then fold into mascarpone mixture.
2 Put warm coffee into a shallow dish, add sugar and Marsala and stir to dissolve sugar. Turn your Savoiardi biscuits on their side and, using a sharp knife, cut them in half to make them very slender (the same shape as original just thinner).
3 Quickly and carefully dip half of the biscuits in coffee, one at a time, so that they are soaked. Then place them in the base of individual dishes or one bigger if you prefer. Spread with mascarpone mix and then dip the other half of the biscuits in coffee, one at a time and place these soaked biscuits on top of mascarpone mix. Finish with a layer of mascarpone smoothing the layer and then sprinkle your chunks of chocolate on top.
4 Refrigerate for two to three hours and you are ready to delight your family or your guests.
