High-End Plating at Balmoral Bathers: Where Sonoma Precision Meets Sydney’s Shores

The light across Balmoral Beach shifts dramatically in midwinter. As the morning fog lifts off the Pacific, it reveals the pristine, whitewashed arches of Bathers Pavilion. The iconic Sydney landmark is my favourite place in Sydney and now it’s poised to host one of the most remarkable culinary collaborations of the decade. But only for four short weeks.

That’s when California’s three-Michelin-starred SingleThread, recently named joint No. 1 restaurant in the world by La Liste, moves its singular vision across the ocean to join forces with Bathers’ Executive Chef Aaron Ward.

Inside the kitchen, Chef Kyle Connaughton will be placing the final element on a dish using delicate fine-tipped tweezers. The pairing of SingleThread’s Californian-Japanese philosophy with Australia’s winter bounty is about rich flavours and an exercise in visual storytelling, restraint, and an uncompromising commitment to place.

And for a month from July 28, the three-Michelin-starred SingleThread chef will be preparing an ultra-exclusive 10-seat lunch for a month.

The Artistry Behind the Canvas

1. Architectural Negative Space

Rather than crowding the plate, the chefs treat the custom ceramic surface like an open canvas. A single cut of Westholme Wagyu rests off-center, framed by a precise ribbon of shime carrot and a translucent glaze of short rib jus. The generous expanse of matte stoneware draws the eye directly to the richness of the beef and the intricate knife work.

2. Naturalistic Composition & The Hassūn

SingleThread’s legendary Hassūn course makes its debut on Sydney shores, blurring the line between culinary art and botanical sculpture. Served on natural wooden planks and stone vessels surrounded by fresh foliage, the opening dish incorporates organic textures, moss-green tones, polished rocks, and delicate winter flora, grounding the dining experience in both Sonoma’s soil and Balmoral’s coastal edge.

3. Vibrant Color Contrast

Winter produce provides a rich, grounded palette. Crimson Satsuma mandarin pieces contrast sharply against sun-dried olives and dark bay leaf oils, while the brilliant gold of fresh local urchin sits atop a pale, velvety malted potato foundation. Every micro-dot of puree and drop of infused oil reflects the light, creating a dish that looks as vibrant as it tastes.

Beyond the plate, artist Alessandro Ljubicic has transformed the dining room with Abundance, a massive floral installation incorporating over 20,000 live bulbs cultivated in the Southern Highlands. Surrounded by living gardens, coastal tides, and bespoke Japanese tableware, each dish served at Balmoral Bathers over the next month stands as a fleeting, unrepeatable moment in fine dining.
