Step by Step Perfect Basic Cake

INGREDIENTS

200 gr castor sugar
200 gr diced butter
200 gr plain flour
4 whole eggs
Lemon zest, finely grated

METHOD

1 Preheat oven to 160 degrees with fan (or 180 degrees without fan)
2 Beat all ingredients together with an electric mixer until well combined for approx. 5 minutes.
3 Split between 2 greased and lined cake tins
4 Place in the middle of the oven for even cooking for 20 minutes.
5 Flip onto flat surface to cool.

To decorate

INGREDIENTS
Cream and fruit filling to taste
Icing sugar to sprinkle

METHOD
1 Place filling of choice on top of the first cake, cover with second cake and decorate with icing sugar.

She was awarded an OAM in 2014 for services to hospitality, the food and wine industry and the community, and has since been honoured as a Vittoria Legend and a Legend of the Vine.
