Detox Pumpkin Curry

INGREDIENTS

Detox Papaya Moo
20 gr dry large red chili, no seeds
15 gr garlic
10 gr young galangal
25 gr lemon grass
2 kaffir lime leaves
100 ml vegetable stock

Pumpkin Curry
70 gr sliced pumpkin
40 gr sliced kohlrabi or other white vegetable
15 gr sliced okra
40 gr detox curry paste
250 gr coconut milk
red chili large sliced
kaffir lime leaf
sweet basil
sea salt to taste

METHOD

Detox Papaya Moo
1 Combine all ingredients and blend till a fine paste.
2 Store in the fridge for up to a week.

Pumpkin Curry
1 Heat up the coconut milk in the pan until it starts to simmer.
2 Add the curry paste, kaffir lime leave and season.
3 Blanch the okra, pumpkin and kohlrabi in boiling water and cool off in ice water.
4 Add these vegetables to the curry and simmer for 2 minutes more.
5 Before serving add the sweet basil and garnish with 3 slices of the chili.
6 Best served with steamed rice or steamed rice noodles.
