Kamalaya Energy Salad

INGREDIENTS
Baby spinach 5g
Rocket leaf 5g
Baby cos 15g
Garlic oven dried 1g
Ginger julienne 3g
Avocado small cubes 15g
Wakame fresh 15g
Wolfberry 5g
Sunflower seed 5g
Millet meal 5g
Asian pear, peeled, small cubes 25g
Green oak 10g
Red oak 10g

METHOD
1. Combine the baby spinach, rocket leaves, baby cos and the green and red oak leaves until evenly distributed in a bowl.
2. Once the salad leaves have been mixed together place in a serving dish and top with the avocado cubes, ginger, fresh wakami, wolfberry and asian pear. (Cubes diced 1cm by 1cm work well for the avocado and asian pear).
3. Lift the salad gently to allow the added ingredients to disperse before sprinkling the oven dried garlic, sunflower seeds and millet meal as a final topping.
4. Serve with balsamic vinaigrette, apple cider vinaigrette and our wasabi dressing.

Karina Stewart is Founder and Chief Wellness Officer of Kamalaya Wellness Sanctuary and Holistic Spa. Born and raised in Mexico, Karina’s life journey has been greatly influenced by her mother’s interest in natural healing, meditation, yoga and spirituality.
