Sydney has never had more new places to lay your head. In the past few years the city has welcomed the world’s largest W hotel, and more recently a luxury beachfront InterContinental at Coogee.
Beyond the hotels, the new Sydney Fish Market opened at Blackwattle Bay in January 2026, giving visitors another reason to linger by the harbour. And the pipeline isn’t slowing, with Australia’s first Waldorf Astoria rising at Circular Quay.
Here, The Carousel rounds up the best new hotels in Sydney, a few worth the drive beyond the city, and the classic NSW experiences to pair with them. On your marks, get set, explore!
Sydney’s Best New Hotels
InterContinental Sydney Coogee Beach
Opened in May 2026 on the site of the former Crowne Plaza, this is the eastern suburbs’ big beachfront reveal. There are 198 rooms (including 22 suites), many with ocean views and the building’s signature shutters reworked into the design. The heated, ocean-facing infinity pool comes with private cabanas, and the Èliva Spa offers magnesium mineral pools, infrared and salt saunas, cold plunges and a crystal steam room. Foodies, take note: this is home to Rick Stein at Coogee Beach, the celebrated British chef’s first Sydney restaurant alongside Shutters Restaurant & Bar. There are even two pickleball courts, a first for a Sydney hotel.
Best for: a beach break without leaving the city — the Coogee to Bondi coastal walk starts at your doorstep.

The Grand National Hotel by Saint Peter, Paddington
Josh and Julie Niland have turned a heritage-listed Paddington pub into a 14-room boutique hotel with their three-hatted restaurant, Saint Peter, on the ground floor. Opened in January 2025, the interiors by Studio Aquilo lean into eucalyptus greens and earthy browns, with footed bathtubs, king beds, Aesop amenities and an all-inclusive minibar. Guests get priority restaurant bookings — worth the stay on its own, given how hard it is to snare a table.
Best for: a food-lover’s weekend on Oxford Street.

25hours Hotel The Olympia, Paddington
A few doors along Oxford Street, Australia’s first 25hours Hotel has breathed new life into the historic Olympia building. Its 109 rooms carry a playful cinema theme (check-in is styled as a video store), and there are four places to eat and drink, including the Mediterranean restaurant The Palomar, rooftop bar Monica, cocktail bar The Mulwray and café-bakery Jacob the Angel. Bikes are available to hire for exploring Centennial Park.
Best for: design lovers and sundowners with a view.

W Sydney, Darling Harbour
Housed in the wave-shaped Ribbon building, W Sydney is the largest W hotel in the world, with 588 rooms and suites. The showstopper is the rooftop infinity pool overlooking Darling Harbour, and there’s an AWAY Spa, a buzzy Living Room bar and multi-level dining. It’s a short stroll to the ICC, the Chinese Garden of Friendship and the harbourside bars of Barangaroo.
Best for: a glamorous city break with a pool-party feel.

The Eve Hotel, Redfern
On the Surry Hills–Redfern fringe, The Eve has 102 rooms and suites across nine configurations, a 20-metre rooftop pool (with underwater speakers), Bar Julius and the rooftop Mexican restaurant Lottie. Local art features throughout including Dinosaur Designs pieces and the minibar is stocked with Australian artisan treats.
Best for: exploring the cafés and bars of Surry Hills and Redfern.

Hotel Indigo Sydney Potts Point
With 105 pet-friendly rooms, a vinyl collection and plenty of nods to the neighbourhood’s colourful past, Hotel Indigo is a stylish base between the CBD and the eastern suburbs. Luke Mangan’s Luc-san brings French-Japanese izakaya dining to the ground floor. Read our full review of Hotel Indigo Potts Point.
Best for: travelling with your four-legged friend.

Adina Apartment Hotel Sydney Town Hall
Opened in February 2025, this newcomer from TFE Hotels offers 145 studios and one- to three-bedroom apartments with full kitchens and washing machines, plus a rooftop pool and gym — ideal for families or longer stays, and moments from Town Hall station.
Best for: families and self-caterers.
