The idea for this Nutella waffle cake came from a serious lack of time and the need to whip up a small and quick birthday cake for a friend. The cook time is minimal, the cleanup is easy and it’s got all the elements to be a real crowd pleaser.
INGREDIENTS
1 ⅓ cup self raising flour (or you can use all-purpose flour and add 2tsp baking powder and a pinch of salt prior to sifting)
½ cup unsweetened cocoa
1 cup Superfine (Caster) sugar
2 eggs
130 g / 5oz softened butter (salted or unsalted doesn’t matter here)
⅔ cup water
50 g oil – olive, canola or vegetable
1 medium sized tub of Nutella
2 punnets of strawberries
METHOD
1 Place all ingredients into a medium mixing bowl and mix on high speed for approximately 2 minutes, until the mix has lightened in colour
2 Preheat a Belgian waffle iron to a medium heat setting and spray thoroughly with non-stick spray
3 Once hot, evenly divide the mixture to make 4 waffles and cook until the maker indicates the cake is done – about 3-5 mins
4 Allow the cake to cool completely in the waffle maker – do not attempt to remove warm waffles
5 Once cooled, remove from the waffle maker
6 Layer your waffles with copious amounts of Nutella and layers of strawberries to create your waffle cake!
