Best Ever Fruit Cake Recipe

Combining raisins, apricots, oranges, cinnamon, ginger, and nutmeg, this is without a doubt the best recipe when it comes to making a fruit cake. It’s sure to become a household favourite!

This fruit cake recipe is an extract from Teresa Cutter’s new cookbook, Simple Healthy Recipes.

INGREDIENTS

  • 350 g (12 oz) plump raisins
  • 250 g (8 oz) organic apricots, chopped
  • 2 navel oranges
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 60 ml (¼ cup/2 fl oz) extra-virgin olive oil
  • 60 ml (¼ cup/2 fl oz) pure maple syrup
  • 4 large organic eggs
  • 200 g (2 cups/ 7 oz) ground almonds
  • 2 teaspoons baking powder
  • 100 g (3.5 oz) walnuts, chopped
  • Cherries to garnish (optional)

METHOD

  1. PREHEAT your oven to 160°C (320°F) fan-forced.
  2. COMBINE raisins, apricots, zest and juice from 2 oranges, vanilla, cinnamon, ginger, nutmeg, olive oil, maple syrup and eggs.
  3. REST for mixture for 15–30 minutes to allow the fruits to soften.
  4. ADD the almonds, baking powder and walnuts and mix through.
  5. SPOON into a deep 20 cm (7 inch) baking tin, lined with baking paper.
  6. BAKE for 45–50 minutes or until the cake is cooked through.
  7. COOL and enjoy.
