Who says you can’t have your cake and eat it too? This single-serve Caramel Choc Lava Cake is proof that you absolutely can – and should. Even if it’s before 6am! It’s rich enough to feel a little bit naughty, yet wholesome enough to make it a completely respectable breakfast option.

With better-for-you swaps like almond flour, coconut oil, and a drizzle of maple syrup instead of sugar, plus Funday’s natural, sugar-free Caramel Chews, this caramel choc lava cake manages to toe the line between decadent and downright virtuous.

And the best part is there’s no oven, no mess, and no guilt for indulging. Instead, in just two minutes, you’ll be digging into a gooey, fudgy masterpiece that feels like a reward for tacking the day ahead (or surviving the one that was!)

So go on. Ditch the smoothie bowl, grab your favourite spoon, and bask in the smug satisfaction of knowing you’ve cracked the code: a dessert that’s as wholesome as it is heavenly. And proof that if done right, you really can have your Sugar Free Caramel Choc Lava Cake, and eat it too!

INGREDIENTS

2 tbsp coconut oil, melted

½ cup chocolate chips

1 tbsp cocoa powder

1 egg

2 tbsp almond flour

2 tbsp self- raising flour

3 tbsp maple syrup

Funday Caramel chews, in the centre

INSTRUCTIONS

  1. Grease small ramekins with cooking spray and a dusting of cocoa powder
  2. Melt coconut oil and chocolate together. Mix in remaining ingredients.
  3. Evenly pour batter into ramekins halfway. Add 2 caramel chews In the centre.
  4. Place In the microwave for 2 mins in 1 min increments. Enjoy!
