Have Yourself a Merry Little Gluten Free Christmas Turkey

Sarah Green, restaurant owner, caterer, consultant, TV presenter and founder of Gifting and Lifestyle brand Sarah Urban says you don’t have to be a grinch if you’re going gluten free this Xmas! “I have always loved entertaining and surrounding myself with friends and family. However, due to my own health journey I had to rethink food, and it prompted me to create recipes that are gluten free, delicious and healthy. Now I have been able to carry this food philosophy through to a beautiful collection of recipes that are perfect for Christmas and will be enjoyed by everyone.” Here she shares her recipe for a gorgeous gluten free Christmas turkey with chive, cranberry and pistachio stuffing.

INGREDIENTS

1 medium turkey fillet approx 750g – 1kg
Stuffing
1 cup gluten free breadcrumbs or
polenta
1/2 large red capsicum – diced
finely
1 cup chopped parsley
1/2 bunch chives, chopped
1/4 cup pistachios, chopped
1/2 cup dried cranberries or goji
berries
Salt and pepper
1 tsp lemon rind
1 – 2 eggs

INSTRUCTIONS

  1. Mix all the stuffing ingredients together.
  2. Make an incision through the turkey fillet lengthwise and open flat.
  3. Place about 2 tbsp of the stuffing along the middle and fold to enclose the filling.
  4. Place the fillet in a baking dish and pour cold water into the pan – it should come up to 3/4 of the fillet.
  5. Bake in a preheated 180°C oven for about 60 minutes.
  6. Rest for 10 minutes before serving, covered with foil.
  7. To serve, slice the fillet into slices approximately 1 inch thick.
  8. Serve your Gluten Free Christmas Turkey with an orange redcurrant jelly sauce
