Try this yummy take on banana bread – the addition of walnuts is exactly what makes it work so well.

INGREDIENTS
Extra Virgin Olive Oil for greasing
2 large ripe bananas, peeled
2 eggs
1/3 cup Extra Virgin Olive Oil
1 cup dark brown sugar
2/3 cup walnuts
1 1⁄2 cups self-raising flour 2 teaspoons mixed spice
METHOD
1 Grease a loaf pan with Extra Virgin Olive Oil and line with baking paper.
2 Mash bananas in a large bowl and mix in eggs and Extra Virgin Olive Oil.
3 Stir in brown sugar and walnuts. Fold in flour and mixed spice.
4 Pour into loaf pan and bake at 180°C for 30-40 minutes until golden brown and cooked through.
5 Turn out onto a wire rack to cool and serve warm, cut into slices or toasted with butter.
