Amazing Wine Creations For This Summer

Try these wine creations. Nothing says summer like pretty pink cocktails, but here’s some ideas to up the ante with a few clever creations.

Here are some simple recipes for frozen grapes, wine ice-cream and wine popsicles to take the fun factor to the next level or whip up a jug of sangrita for a festive vibe.

Brazilian Dessert: Quindim (Coconut Custard, Bahía Way)

Pea & Ricotta Fritter Salad

Ingredients:

1 bottle of Verscato (you can substitute with any sparkling white wine, champagne or moscato if you prefer), fresh cotton candy (fairy floss), flavour of your choice.

To Make:

Fill champagne flutes 2/3 full (do not fill to the top as you don’t want the liquid to touch the fairy floss or it will dissolve). Just before serving open the fairy floss and gently pull off small tufts and place on the rim of each glass. Make sure the fairy floss is slightly wider than the rim of the glass so it doesn’t fall in. Serve immediately and pop the floss into the drink to dissolve prior to drinking, it will impart a delicate sweet finish.

Sangrita [Sangria + Margarita] – Recipe from One Sweet Mess

Ingredients:

1 bottle of sweet red wine, 1/2 cup orange juice (preferably freshly squeezed), 1/2 cup lime juice (preferably freshly squeezed), 1/4 cup simple syrup (equal parts sugar and water), 1/2 cup orange liqueur (eg. triple sec or Cointreau), 1/2 cup tequila.

To Make:

Add all of the ingredients to a large pitcher. Stir to combine and place in the fridge to chill for 2 hours before serving.

Marinated Frozen Grapes – Recipe by Julie Blanner

Ingredients:

3 cups of red seedless table grapes removed from stems, 1-2 cup of red wine, 3 tablespoons of sugar.

To Make:

Place grapes in a bowl and cover with wine. Allow to marinate refrigerated for 12+ hours. Drain grapes, toss in sugar and freeze for 2 hours. You can also leave off the sugar and use these instead of ice cubes to keep white wine cool on hot days.

Wine & Peach Pops – Recipe from Jennifer Meyering

Ingredients:

3 peaches, 1 cup white wine, 3 tablespoons of peach schnapps, 1-2 tablespoons of sugar or alternative sweetener of your choice.

To Make:

Pit and roughly slice 2 peaches and place in a blender with wine, schnapps and sugar. Blend until smooth; about 30 seconds – 1 minute. Pit and thinly slice remaining peach. Pour puree mixture into popsicle moulds, filling each about 1/2 way full. Place 1-2 peach slices into each mould and top with any remaining puree mixture. Cover and insert popsicle sticks. Freeze until fully set, about 4-6 hours. Enjoy!

Wine Ice-Cream – Recipe from The Sits Girls

Ingredients:

3/4 cup of sweet white wine, 3 tablespoons of caster sugar, 1 1/4 cups of whipping cream and berries or chocolate for garnish.

To Make:

Pour the wine in to the mixing bowl and gradually add the caster sugar and whisk until it is completely combined. Slowly add the heavy cream to the wine and sugar mixture and whisk again.  You will see the mixture begin to thicken up. Pour the mixture into a plastic container and seal and freeze for about 3-4 hours. Scoop and enjoy!
