Pavlova Hacks: Four Ways to Put a Twist on this Classic Aussie Dessert

Debates about country-of-origin aside, pavlova is an iconic addition to an Aussie Christmas. And, while we’d never dare suggest that there’s anything wrong with the classic combo of crispy meringue shell and soft, marshmallow-like interior, adorned with a medley of summer fruits and dollops of whipped cream, there’s certainly no harm in trying a few twists to elevate this Summer dessert staple into something special. To get you started internationally acclaimed Australian pastry Yuji Shin (of Funda fame) shares her top four pavlova hacks, to help yours stand out.

Beyond berries

According to Yuji one of the easiest ways to put a twist on your pavlova is to reimagine the toppings. Step outside the predictable realm of summer fruits and explore unconventional choices. Instead of relying on the usual suspects, consider making your own ice cream to accompany the pavlova.

“Experiment with unique flavours like lavender, earl grey, or even balsamic strawberry. The key is to let your taste buds guide you, creating a harmonious blend of textures and flavours that complement the delicate meringue base,” she says.

The beauty of this approach is its versatility. You can tailor the toppings to match the season or a specific theme, making your pavlova a standout centerpiece at any gathering. From decadent chocolate ganache to exotic fruit coulis, the possibilities are endless when it comes to customising your pavlova toppings.

Making meringue magic

Take your pavlova to the next level by infusing flavour directly into the meringue itself. This can be easily achieved by incorporating a flavoured syrup into the meringue mixture before baking. For a unique twist, consider using yuzu syrup, a citrusy delight commonly found in Korean households. If you’re in Australia, you can source yuzu syrup from Asian groceries, adding a delightful zing to your pavlova.

Experiment with other syrups like rosewater, passion fruit, or even a hint of mint to impart distinct flavours to the meringue. This simple yet impactful hack transforms the foundation of your pavlova, offering a surprise burst of flavour with every bite.

Size and surprise

Why stick to tradition when you can make pavlova your way? Break free from the standard large pavlova and experiment with different sizes and shapes. Create individual pavlova nests for a personalised touch or go grand with a show-stopping pavlova tower. The choice is yours!

“Adapting the size and shape of your pavlova allows for greater creativity and flexibility,” says Yuji. “It also makes serving a breeze, especially for gatherings where individual portions might be more convenient. Whether you opt for mini pavlova bites or an impressive pavlova wreath, the visual impact will be undeniable.”

Chase the rainbow

Finally, Yuki suggests adding a splash of colour to your pavlova experience by playing with vibrant hues.

“Incorporate food dye into the meringue, whipped cream, or even the homemade ice cream. Coordinate the colors for an elegant monochromatic look, or go bold with a riot of contrasting hues. The result is not only a flavour sensation but a visual feast that captivates the eyes.”

To complete the rainbow effect, choose fresh fruits that match or clash with the chosen colours. From blueberries to passion fruit, the spectrum of possibilities allows you to customise your pavlova to suit any occasion. This playful approach turns the classic dessert into a work of edible art.
