Tasmania Takes Six Michelin Keys, and Saffire Freycinet Claims the Highest Honour of All

Tasmania has long traded on its produce, its wilderness and its unhurried pace. Now, that combination is translating into recognition on the global hospitality stage. Six Tasmanian stays have been awarded Michelin Keys for 2026, up from five last year, spanning a lodge on the Freycinet Peninsula and a run of Hobart addresses where heritage, art and the breakfast table do much of the talking.

The result sits within a bigger travel trend. Australia’s Key list has grown from 35 hotels to 54 in a year, and Tasmania holds a meaningful share of it. For travellers who would rather spend their leave at home, the list doubles as a map of extraordinary stays, no passport required.

Unlocking the keys…

The Keys are the hotel answer to Michelin’s restaurant Stars. Inspectors stay and visit anonymously, judging each hotel against five universal criteria: architecture and interior design, quality and consistency of service, personality and character, value for money, and contribution to the local setting. For example, one Key marks “a very special stay”, Two Keys “an exceptional stay”, and Three Keys “an extraordinary stay”.

The headline act: Saffire Freycinet

Elevated from Two Keys to Three, Saffire (main feature image) now holds the guide’s highest hotel distinction, one of only three properties in the country to do so. The lodge looks out over Freycinet National Park at Coles Bay, pairing striking architecture and highly personalised service with a deep sense of its east coast surrounds.

Dining is all-inclusive and follows Tasmanian produce from paddock and water to plate, while the experiences are wonderfully hands-on: shucking oysters in the waters of Coles Bay, harvesting honey from Saffire’s own hives. Meanwhile, later this year comes The Jewel, an 800-square-metre private villa conceived around space, privacy and a close relationship with the landscape.

Hobart, in four parts

Equally importantly, Sown south, Hobart brings four One-Key stays. Each with a distinct personality.

The Corinda Collection is the newest name on the list. A late-1870s estate in Glebe, it sits within more than an acre of established gardens, minutes from the city centre. Rooms, pavilions and heritage cottages retain their original antiques and period details, so a night here becomes a quiet immersion in Hobart’s past. Breakfast follows the same philosophy: home-baked bread, farm eggs and preserves made with local fruit.

Islington Hotel rests beneath kunanyi/Mount Wellington in an 1847 heritage property, with 11 individually styled rooms, established gardens and light-filled shared spaces that frame views of the mountain. Anthony Illingworth leads the dining, with seasonal Tasmanian produce at its centre, and open fires and local wine complete the picture of a private retreat just minutes from town.

The Tasman, a Luxury Collection Hotel gathers three chapters of Hobart’s architectural story under one roof: 1840s Georgian, 1940s Art Deco and contemporary design. Positioned between the waterfront, Salamanca and the city centre, it’s Australia’s first Luxury Collection hotel, with views across the harbour and towards the mountain. New event space LUMINA has arrived, and BODHI Spa + Bathhouse opens in November 2026.

The Henry Jones Art Hotel has turned the old IXL Jam Factory on the waterfront into Australia’s first dedicated art hotel. Nineteenth-century sandstone and industrial heritage frame more than 400 original and contemporary works by emerging and established Tasmanian artists, and the individually designed rooms and suites make art part of the stay. Returning recipient MACq 01 Hotel completes the Hobart line-up.

Why Tasmania, and why now

Few places make the case for eating and drinking your way across a state as persuasively. Seasonal produce, from truffles, cherries and berries to fresh seafood, travels some of the shortest distances in the world, and the island is home to one of only two UNESCO Cities of Gastronomy in Australia. It’s the country’s whisky capital, and its cool-climate wine regions produce some of the nation’s finest, including the most awarded sparkling outside Champagne.

Beyond the table, nearly half of Tasmania is protected wilderness, and scenic country roads keep drive times short between regions. What’s more, the calendar has its own rhythm too, from Dark Mofo and Tasmanian Whisky Week to the fagus turning gold in autumn and lavender fields in full summer bloom.

Ultimately, a weekend here can be as simple or as ambitious as you like: a Michelin-recognised bed, a paddock-to-plate dinner, a mountain or coastline outside the window, and a domestic flight to get you there.
