Her latest creation (created in collaboration with Pyrex Australia) is a Chocolate Chia Mousse, which has captured the imagination of foodies everywhere, racking up over 1 million views on Instagram. Designed to be made once and enjoyed throughout the week, this viral breakfast is creamy, chocolatey, and packed with protein, fibre, and healthy fats – the perfect balance to fuel early mornings, workouts, and busy days on the go.
INGREDIENTS
- 3 cups Greek yoghurt
- 1 cup milk
- 1/3 cup cocoa or cacao powder
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup chia seeds
- Berries, to serve
INSTRUCTIONS
- Add yoghurt, milk, cocoa powder, maple syrup and vanilla extract to a mixing bowl. Stir well.
- Add chia seeds and mix until combined. Let sit for 10 minutes and stir again to ensure there are no clumps.
- Portion into 5 meal prep containers. Top with berries and refrigerate for at least 2 hours or overnight. Enjoy!
