Make These Gorgeous Vegan Mocha Magic Bites In Less Than 30 Minutes

Makes approx 15 square bites
Preparation time 25 minutes + 4-6 hours cooling time

INGREDIENTS

Base
1 cup pecans
3 tbs raw cacao powder
8 Medjool dates
Pinch of pink salt

Coffee Vanilla Cream
8 cups raw cashews, soaked
1 tsp vanilla essence
1 1/3 cup coconut oil, melted
1 cup coconut nectar
½ teaspoon salt
1 1/3 cup very strong, brewed organic coffee
1 cup cacao nibs

Chocolate Sauce
½ cup cacao powder
½ cup coconut oil, melted
¼ cup coconut nectar
½ tsp vanilla essence
Pinch of pink salt

METHOD
1 To make the base, blend the pecans and cacao powder in a food processor, process until a fine flour forms, then add the Medjool dates and salt, and blend again until a sticky dough forms.
2 Press the mixture into a flat tray or plate lined with a piece of waxed baking paper. Set aside in the fridge.
3 To make the Coffee Vanilla Cream blend all ingredients together.
4 Pour half of the Coffee Vanilla Cream over the top of the base and refrigerate the remaining half of the cream.
5 For the Chocolate Sauce blend all the ingredients together and drizzle over the top of the Coffee Vanilla Cream, place in freezer and allow to set for 1 hour
6 Once the chocolate sauce has set, place another layer of the remaining Coffee Vanilla Cream over the top of the chocolate topping layer. Return to the freezer for another 2-3 hours.
7 Remove from the freezer and slice into bite-size pieces.
