In this recipe for Healthy Big Mac Bowls, crispy, golden tortilla bowls stand in for the bun, piled high with seasoned beef, crunchy lettuce, melty mozzarella and a drizzle of homemade Big Mac-style sauce. It hits every drive-through craving, with over 40 g of protein and under 500 calories per serve. Ready in 25 minutes, fakeaway just got a glow-up.
INGREDIENTS
Olive oil spray
2 low-carb, high-protein wraps (45 g per wrap)
400 g extra-lean beef mince
1 tablespoon finely chopped garlic
1 tablespoon smoked paprika
1-2 tablespoons low-sugar barbecue sauce
Salt and freshly ground black pepper, to taste
60 g (1 cup) chopped iceberg lettuce
40 g shredded light mozzarella
20 g finely chopped brown onion
2 tablespoons Healthier burger sauce (page 38)
1 tablespoon sesame seeds
INSTRUCTIONS
Preheat the oven to 180°C fan-forced (200°C conventional).
Lightly spray two ovenproof bowls with olive oil and press a wrap into each to form a bowl shape (or crimp into a star shape).
Bake for 12-15 minutes, or until golden and crispy. Meanwhile, heat a non-stick frying pan with oil spray over medium-high heat.
Add the beef mince, garlic, paprika, barbecue sauce, and salt and pepper to taste.
Cook for 5-6 minutes until browned and cooked through.
Remove the tortilla bowls from the oven and fill them with lettuce, beef, mozzarella, and onion.
Drizzle generously with the burger sauce and sprinkle with sesame seeds. Crack the bowls apart and enjoy like nachos, or grab a fork and dig straight in.
