With the new work year well underway for most, it feels like everyone is suddenly committed to the “healthy, homemade lunch” game — office desk lunches included. If you’re anything like us, you want meals that tick the nourishing box without demanding gourmet-level effort or a full Sunday meal prep marathon. Enter this Greek lamb meatball lunchbox, inspired by JSHealth founder Jess Sepel, who firmly believes that wholesome food should be simple, satisfying and realistically doable on a busy week. Ready in just 25 minutes, packed with flavour and perfect for make-ahead lunches, it’s the kind of recipe that makes sticking to your lunchtime goals feel less like a chore and more like a treat.
INGREDIENTS
- 500g ground lamb or beef
- 30g (¼ cup) breadcrumbs
- 1 small red onion (100g), grated
- 2-3 cloves garlic
- 15g (¼ cup) fresh mint, chopped
- 15g (¼ cup) fresh parsley, chopped
- Salt, pepper, to taste
- 1 tsp dried oregano
- 2 eggs
- 1 tsp ground cumin
- 1 tsp chilli flakes
- 2 tbsp olive oil for brushing
- To serve:
- Lemon wedges and pita bread
- Our Tzatziki dip
- Cherry tomatoes and fresh rocket
INSTRUCTIONS
- Chop onion, garlic and herbs in the food processor, then add the mince, breadcrumbs, eggs and seasoning. Blitz until combined and shape into meatballs.
- Brush or spray your air fryer with olive oil and fry at 170°C for 8 mins, flip and increase heat to 180°C and cook for another 5 minutes.
- To assemble your lunchbox, divide the meatballs between four boxes. We served ours with fresh rocket, cherry tomatoes, lemon wedges, pita bread and our easy tzatziki dip.
