INGREDIENTS
Flour 180g
Half cup crushed Smiths Originals chips
200g caster sugar
180g brown sugar
2 tsp baking powder
150g butter
4 large eggs
1 egg white
200ml milk
1 tsp salt
METHOD
1 Pre heat oven to 180 degrees
2 Grease and line a loaf tin
3 Put flour and chips in a blender
4 Place in a bowl, add both sugars and the baking powder
5 Melt butter in the microwave, keep warm
6 In a separate bowl whisk eggs and egg whites until light and fluffy
7 Pour in warm butter (if the butter is over 60 degrees this will scramble eggs), whisking continuously
8 While whisking add milk and salt
9 Add the dry ingredients when fully folded in
10 Place in the fridge for 30 minutes to rest Place in oven – this cake takes approximately 45 min depending on size It is ready when it springs back to the touch
