Skill level: Easy

Ingredients:

1 Litre SodaStream sparkling water

1 pear, sliced

2 kiwis, sliced thinly

2 limes, quartered

1 tsp Stevia extract

Mint

Method:

Prepare sparkling water: Fizz 1L of cold fresh water. Squeeze juice from limes into a blender, and then add lime wedges.

Half a kiwi fruit and spoon out flesh, chop and add to blender. Add sliced pear, stevia, ice and sparkling water to blender. Blend, pour into glasses and garnish with mint.

Ingredients

1 Litre sparkling water

Mint leaves

1/2 lemon, sliced

1/2 cup raspberries

6 strawberries, hulled and sliced

1/2 cup blackberries

Ice

Method:

Prepare sparkling water: 1L of cold fresh fizzy water.

Gently muddle mint, lemon and berries together in a jug.

Add ice, pour sparking water over the top and stir gently.

Serve in glasses with lemon, ice and mint to garnish.

Skill level: Intermediate

Ingredients:

500ml sparkling water

2 sprigs fresh rosemary

¼ cucumber, peeled into ribbons

1 tbsp honey

1 whole lime

Ice

Method:

Use a peeler to create 5 or 6 cucumber ribbons.

Cut lime into quarters. Fill 3/4’s of a tall glass with ice.

Squeeze 1 quarter of lime into the glass and slice another quarter to add to glass.

Add in honey, rosemary sprigs and cucumber slices.

Top with sparkling water. Stir, serve and enjoy!

Skill level: Easy

Ingredients:

1 Litre SodaStream sparkling water

50ml brewed and cooled green tea

1tbsp lime juice

5 large mint leaves

2 tsp sugar Ice

Method:

Prepare sparkling water: Fizz 1L of cold fresh water.

Muddle the lime juice, mint and sugar together in a tall glass until the leaves bruise lightly and the flavours release.

Add ice until glass is about 3/4 full and then pour in green tea.

Top with sparkling water & garnish with mint.

Stir thoroughly and sip away!

Ingredients:

20mls of PS smoked lemonade syrup

80mls of soda water

10mls of fresh lime juice

4 dashes Australian Bitters

Method:

Built in a highball over ice Garnished with a rosemary sprig and lemon wedge

Ingredients:

60ml orange juice

30ml pineapple juice

3 dashes of Australian Bitters

2 drops of orange blossom water

2 spoons of passionfruit

2 spoons of rock candy syrup

Method:

Shake with ice and pour it into glass and garnish with sprig of mint

The Bitter End

Ingredients:

Sugar Syrup Ingredients

240g castor sugar

500ml filtered water

1 orange quartered and burned on chargrill

1 red chilli burned on chargrill

Place all ingredients in a pan and reduce by 1/3rd

Mocktail Ingredients

60ml fresh pink grapefruit juice

30ml sugar syrup

4 dashes Australian Bitters

Stick of rosemary

Method:

Place fresh pink grapefruit juice into a mocktail shaker, add sugar syrup and Australian Bitters. Grab a brandy glass and burn a 2 inch stick of rosemary, capture the smoke and place a glass upside down on a napkin Turn over the glass and add 1 large cube of ice. Pour over the mix from the shaker into the glass and garnish with rosemary.
